Beef and Mushroom Skillet

Just about everyone enjoys a good steak. But if you’re stuck in a rut with the same old sides, this Beef and Mushroom Skillet will get you out of your meat and white potatoes rut with the healthy addition of mushrooms and sweet potato in a flavorful  sauce.  The added bonus is it’s easy to make, and even easier to clean-up.  Just one skillet! This dish will “easily” become your new go-to recipe on steak night.

Yield: 4 Servings

Total Time: 40 Minutes

Prep Time: 15 minutes

Cooking Time: 25 minutes

Ingredients

1 ½ pounds sirloin steak, thinly sliced
1 pound cremini or wild mushrooms, sliced
1 large, sweet potato, peeled and cubed
1 red onion, thinly sliced
2 cloves garlic, minced
1 tablespoon fresh thyme leaves
1/2 cup beef broth
2 tablespoons balsamic vinegar
¼ teaspoon sea salt
¼ teaspoon black pepper
2 tablespoons extra-virgin olive oil
Chopped fresh parsley (for garnish)
Crusty whole-grain bread (for serving)

Directions

Heat olive oil in a large skillet over medium-high heat. Add sliced beef and cook until browned. Remove from the skillet and set aside.

In the same skillet, add more oil if needed. Sauté sliced mushrooms, sweet potato cubes, red onion, and garlic until softened.

Add beef broth, balsamic vinegar, and fresh thyme to the skillet. Stir well.

Return the cooked beef to the skillet and simmer for an additional 10-15 minutes.

Season with salt and pepper to taste.

Garnish with chopped fresh parsley.

Serve the Beef and Mushroom Skillet over crusty whole-grain bread.
